Ingredients
Serves: 10- 1 (3 1/2 pound) pork shoulder roast, cubed
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons canola oil
- 2 (10 ounce) cans green enchilada sauce
- 1 large onion, thinly sliced
- 2 (2 1/4 ounce) cans sliced black olives, drained
- 1/2 cup chicken broth
- 2 tablespoons ground cumin
- 3 garlic cloves, minced
- 2 teaspoons dried oregano
- 2 tablespoons flour
- 1 cup sour cream
- 1/2 cup minced fresh cilantro
- 10 (8-inch) flour tortillas
- 2 cups shredded cheese
Preparation method
Prep: 20 mins | Cook: 7 hours1. Pat pork dry with paper towels, then season with salt and pepper.
2. Pour canola oil into a large skillet and set over medium heat. Add the pork roast and brown meat on all sides in hot oil. Set the pork in a 5-quart slow cooker.
3. In a bowl, stir enchilada sauce together with onion, carrots, olives, broth, cumin, garlic, and oregano. Add to slow cooker. Cook on Low for 6 to 8 hours, until meat falls apart with prodded with a fork.
4. Whisk flour into sour cream in a bowl, then pour into the slow cooker. Continue to cook for 30 minutes, with heat turned up to High. Shred
5. Place some of the cooked pork mixture on each tortilla and top with cilantro and cheese. Roll up and serve.
