Coffee mousse recipe details
Ingredients
4 tsp | instant coffee |
50 g | caster sugar |
3 tbsp | boiling water |
1 tbsp | powdered gelatine |
3 tbsp | cold water |
300 medium | whipping cream |
2 medium | eggs, whites only |
chocolate curls, for decoration |
Instructions
Dissolve the coffee and caster sugar in the boiling water.Leave the gelatine to soak in the cold water for 5 minutes, then place the bowl in a pan of gently simmering water for 1-2 minutes until the gelatine has completely dissolved, stirring occasionally.
Pour the coffee into the gelatine liquid, stirring to mix.
Remove the bowl from the pan and leave the coffee mixture to cool slightly.
Whip the cream until soft peaks form.
Whisk the egg whites until stiff.
Using a large metal spoon, quickly blend the coffee mixture into the whipped cream, then fold in the egg whites.
Divide the mixture equally between 6 small dishes. Cover and refrigerate for 2-3 hours, until set.
When serving, decorate mousse with chocolate curls.
