Coffee and walnut sponge cake recipe details
Ingredients
115 g | self-raising flour, sifted twice |
1 tsp | baking powder |
115 g | soft margarine, room tmperatue |
115 g | castor sugar |
2 large | eggs |
60 g | walnuts, chopped and crushed finely |
1 tbsp | instant coffee |
1 tbsp | hot water |
a little cold water |
Instructions
Preheat oven to 170°C. Grease two 18cm by 4c) deep tins.Mix the coffee with the hot water and make an essence.
Place all the ingredients including the coffee essence in a mixing bowl and mix to a smooth consistency using an electric hand mixer.
When you have a good soft dropping consistency, add a teaspoon of cold water and mix in.
Divide the mixture between the two tins (or place in cake tin) and spread evenly.
Cook in the centre of the oven for 30 minutes, until the sponge has risen and is firm to the touch.
Remove from the oven and allow to stand for a minute before turning out onto a wire cooling rack. Sandwich with a butter icing.
