Codfish au gratin recipe details
Ingredients
750 g | codfish fillet |
4 tbsp | lemon juice |
salt and pepper | |
600 g | potatoes |
2 stalk(s) | leek |
300 g | tomatoes |
5 clove(s) | garlic |
½ bunch(es) | parsley, chopped |
750 g | spinach |
2 tbsp | olive oil |
3 tbsp | rasins |
3 tbsp | pine nuts |
50 g | black olives, stones removed |
250 ml | chicken broth |
250 ml | white wine |
1 tsp | saffron, ground |
Instructions
Cut the fish fillet in slices, sprinkle with lemon juice and season with salt and pepper. Peel the potatoes and cut in slices. Thinly cut the leek in rings. Peel, seed and dice the tomatoes. Finely chop the spinach and the garlic. Mix together the leek, tomatoes, spinach and garlic.Grease a casserole dish with olive oil. Layer the potatoes on the bottom, then the fish, then the vegetables. Mix the parsley with the raisins, pine nuts and olives and evenly divide the mixture on top.
Heat the chicken broth, stir in the white wine and the saffron and pour this over the casserole. Season with salt and pepper.
Bake for approximately 40 minutes at 200°C.
