|1 kg||pork sausage, cut into pieces|
|1 kg||smoked ham, cut into pieces|
|2 medium||onions, chopped|
|1 kg||potatoes, peeled, chopped|
|4 tbsp||fresh parsley, chopped|
|salt and pepper, to taste|
Bring the water to a boil and place the sausage and ham in a pot when at boiling point. Cook for 5 minutes. Drain, but reserve the liquid.
Put the meat into a large saucepan with the onions, potatoes, and parsley. Add enough of the stock to just about cover the contents.
Cover the pot and cook over low heat for about 1 hour. Liquid should be reduced by half. Season with salt and pepper.
Serving suggestions:Serve hot with fresh Irish Soda Bread and a glass of stout.
