Ingredients
1 kg | pork sausage, cut into pieces |
1 kg | smoked ham, cut into pieces |
1 l | water |
2 medium | onions, chopped |
1 kg | potatoes, peeled, chopped |
4 tbsp | fresh parsley, chopped |
salt and pepper, to taste |
Instructions
Bring the water to a boil and place the sausage and ham in a pot when at boiling point. Cook for 5 minutes. Drain, but reserve the liquid.Put the meat into a large saucepan with the onions, potatoes, and parsley. Add enough of the stock to just about cover the contents.
Cover the pot and cook over low heat for about 1 hour. Liquid should be reduced by half. Season with salt and pepper.
Serving suggestions:Serve hot with fresh Irish Soda Bread and a glass of stout.
