Ingredients

1 kg pork sausage, cut into pieces
1 kg smoked ham, cut into pieces
1 l water
2 medium onions, chopped
1 kg potatoes, peeled, chopped
4 tbsp fresh parsley, chopped
salt and pepper, to taste


Instructions

Bring the water to a boil and place the sausage and ham in a pot when at boiling point. Cook for 5 minutes. Drain, but reserve the liquid.

Put the meat into a large saucepan with the onions, potatoes, and parsley. Add enough of the stock to just about cover the contents.

Cover the pot and cook over low heat for about 1 hour. Liquid should be reduced by half. Season with salt and pepper.

Serving suggestions:Serve hot with fresh Irish Soda Bread and a glass of stout.
