Ingredients
500 g | cod |
6 medium | potatoes, cooked, mashed, creamed with butter |
4 tbsp | single cream |
4 tbsp | butter |
4 tbsp | parsley, finely chopped |
1 tbsp | fresh thyme |
1 large | onion, chopped |
6 tbsp | oil for frying |
Instructions
Soak cod in water overnigh. Change water several times.Preheat oven to 120°C.
Cook cod for 10 to 15 minutes. Flake fish and combine with all ingredients. Blend well. Form cakes.
Pour oil into a skillet and fry fish cakes over medium heat until golden brown. Remove from skillet and drain on paper towels; keep warm in oven until ready to serve.
