Ingredients

500 g cod
6 medium potatoes, cooked, mashed, creamed with butter
4 tbsp single cream
4 tbsp butter
4 tbsp parsley, finely chopped
1 tbsp fresh thyme
1 large onion, chopped
6 tbsp oil for frying

Instructions

Soak cod in water overnigh. Change water several times.

Preheat oven to 120°C.

Cook cod for 10 to 15 minutes. Flake fish and combine with all ingredients. Blend well. Form cakes.

Pour oil into a skillet and fry fish cakes over medium heat until golden brown. Remove from skillet and drain on paper towels; keep warm in oven until ready to serve.
