Coconut squares recipe details
Ingredients
6 medium | eggs, whites only |
300 g | granulated sugar |
1 tsp | baking powder |
150 g | unsweetened coconut, grated |
100 g | flour |
For the Filling: | |
6 medium | eggs, yolks only |
120 g | granulated sugar |
300 ml | milk |
150 g | butter |
4 tbsp | flour |
1 tsp | vanilla extract |
Instructions
Beat egg whites until soft peaks form, add sugar and beat until stiff. Fold in coconut, flour and baking powder and mix until well combined.Grease a baking pan (30cm x 22cm) and spread evenly with the mixture.
Preheat oven to 170°C.
Bake for 20 minutes or until just lightly brown. Remove from oven abd let cool to room temperature.
Filling:
Beat egg yolks with sugar for 5 minutes. Scald milk and set aside.
Beat egg mixture in a bowl placed over simmering water until slightly warm. Beating constantly, slowly add scaled milk.
Graudally add the flour, beating well after each addition, until thick and creamy, 5-10 minutes. Set aside and let cool completely to room temperature.
Mix together butter and vanilla. Fold into custard mixture and spread on top of cake bottom.
Sprinkle with finely shredded unsweetened coconut.
Refrigerate for 3 hours. To serve cut into squares.
