|800 ml||cream of coconut|
|1 l||evaporated milk|
|800 ml||coconut milk|
InstructionsCombine coconut milk, cream of coconut, water and evaporated milk.
In saucepan, dissolve cornstarch in the milk and stir well to prevent lumps from forming. Add to the coconut and milk mixture and stir well. Add salt, sugar, vanilla and mix.
Pour into a large pot and place on the cooker. Cook on medium heat and stir until mixture begins to thicken, about 40 minutes. Keep stirring onstantly until mixture boils and thickens. Then lower heat to low and boil for 10 more minutes, stirring gently.
Pour into a large pan or dish and set aside to cool. Refrigerate 6 hours or overnight.
To serve, cut into slices and sprinkle with cinnamon.
