Coconut loaf recipe details
- Ingredients:
- 4 ounces butter
- 1/2 cup sugar
- 2 eggs
- 1-1/2 cups self-rising flour
- 4 Tablespoons desiccated coconut (short-flaked)
- 2 Tablespoons milk
Cream butter and sugar together until light and fluffy. Beat in eggs. Add flour slowly while mixing. Fold in coconut and milk. Turn into a greased and floured bread pan. Bake in a preheated oven at 350 degrees for 1 to 1-1/4 hours. Turn out of pan and cool on a wire rack.
