Ingredients
pineapple chunks | |
3 tbsp | brown sugar |
120 ml | dark rum |
1 tsp | allspice, ground |
80 g | coconut, shredded |
4 scoop(s) | vanilla ice cream |
Instructions
Preheat oven to 180°C.
Place pineapple chunks into a baking pan. Add sugar, rum and allspice and toss well to coat. Roast for 1 hour or until pineapple is caramelised and tender.
Place coconut into a shallow bowl and add the ice cream. Mix it well until coated in coconut.
Spoon some pineapple into a serving dish and add ice cream.
