Cockle soup recipe details
Ingredients
40 | cockles, cleaned and ready to cook |
salt and freshly ground black pepper | |
½ bunch(es) | parsley, chopped |
500 ml | milk |
30 g | butter |
1 | onion, chopped |
30 g | flour |
½ stalks | celery, chopped |
125 ml | single cream |
Instructions
In a saucepan, cover the cockles with slightly salted water and bring to a boil. Cook until they are open. Strain through a fine sieve and collect ½ a litre of the cooking liquid. Take the cockles out of their shells.In a large saucepan, melt the butter and sauté the onions until lucent. Dust with the flour and cook stirring for a minute. Pour in the reserved cooking liquid and bring to a boil. Add the milk and half of the cream. Stir in the celery and simmer for 5-6 minutes. Stir in ¾ of the parsley and add the cockles. Season to taste with salt and pepper.
Ladle the soup into warmed soup bowls. Serve garnished with the remaining cream and parsley.
