Ingredients

For the Base:
125 g digestive biscuits, crushed and crumbed
4 tbsp sugar
75 g butter, melted
For the Filling:
600 g cream cheese
175 g caster sugar
4 medium eggs
1 ½ tsp vanilla extract
1 tsp cream of tartar
For the topping:
450 ml soured cream
1 tsp vanilla extract
100 g caster sugar

Instructions

Preheat oven to Gas Mark 4, 180°C, 350°F.

Base:mix ingredients together in a bowl until evenly coated and turn into a 9 inch, 22cm springform cake tin. Spread the mixture evenly and press down to firm. Chill for 20-30 minutes to firm up.

Filling:beat cream cheese with sugar in a bowl, using an electric food mixer, until smooth. Add eggs one at a time, while still beating. Add vanilla and cream of tartar and blend in well. Pour over base.

Bake for 45-50 minutes until centre is just set. Remove from oven and allow to cool for 5-10 minutes.

Topping:blend ingredients together in a bowl until smooth. Pour over top of cheesecake, starting at the outside and working your way to the centre. Return cake to oven for 5 more minutes.

Allow to cool in tin until cold. Refrigerate for at least 5-6 hours before serving.
