Classic new york cheese cake recipe details
Ingredients
For the Base: | |
125 g | digestive biscuits, crushed and crumbed |
4 tbsp | sugar |
75 g | butter, melted |
For the Filling: | |
600 g | cream cheese |
175 g | caster sugar |
4 medium | eggs |
1 ½ tsp | vanilla extract |
1 tsp | cream of tartar |
For the topping: | |
450 ml | soured cream |
1 tsp | vanilla extract |
100 g | caster sugar |
Instructions
Preheat oven to Gas Mark 4, 180°C, 350°F.Base:mix ingredients together in a bowl until evenly coated and turn into a 9 inch, 22cm springform cake tin. Spread the mixture evenly and press down to firm. Chill for 20-30 minutes to firm up.
Filling:beat cream cheese with sugar in a bowl, using an electric food mixer, until smooth. Add eggs one at a time, while still beating. Add vanilla and cream of tartar and blend in well. Pour over base.
Bake for 45-50 minutes until centre is just set. Remove from oven and allow to cool for 5-10 minutes.
Topping:blend ingredients together in a bowl until smooth. Pour over top of cheesecake, starting at the outside and working your way to the centre. Return cake to oven for 5 more minutes.
Allow to cool in tin until cold. Refrigerate for at least 5-6 hours before serving.
