Quick cardamom ice cream recipe details
Ingredients
500 ml | full-fat milk |
250 ml | evaporated milk |
250 ml | sweetened condensed milk |
175 g | full-fat cream cheese |
tsp | ground cardamom |
1 tsp | freshly squeezed lemon or lime juice |
crushed unsalted pistachio nuts, as topping OPTIONAL |
Instructions
A recipe unusual in that it contains no cream or sugar (other than that in the condensed milk)Place the full-fat milk in a saucepan and add the cardamom. Bring to a boil, reduce heat and simmer for 10 minutes to infuse the milk. Stir constantly and stir in any film or powder that rises to the surface. Remove from heat and set aside to cool.
Place the cream cheese in a bowl and whisk to soften. Gradually add the evaporated milk and whisk until combined. Add the condensed milk and cardamom milk and whisk until combined. Add the lemon juice and whisk together.
Pour mixture into a covered freezer-proof container and place in freezer for at least 3 hours or until frozen.
Serve as ice cream, topped with a sprinkling of pistachios is wished.
