Classic danish apple cake recipe details
Ingredients
1 kg | apples, e.g. Belle de Boskoop, Reinette de Canada |
1 deciliter(s) | water |
sugar, if necessary | |
1 tsp | vanilla sugar |
100 ml | dried bread crumbs |
50 ml | sugar |
50 g | butter |
2 deciliter(s) | whipping cream |
jelly, either red-currant, crabapple, apple or raspberry (colourwise the best) |
Instructions
Pare and core the apples, cut them into slices, and cook a thick applesauce with the water and sugar, season with vanilla. Let cool.Mix the dried breadcrumbs with sugar in a bowl. Melt the butter in a frying-pan over medium heat and add breadcrumb and sugar mixture into the pan. Cook to caramelize, stirring all the time, so it does not stick together.
To serve, spoon into a glass bowl: layer of applesauce, layer of breadcrumbs, repeat once more, breadcrumbs on top.
Decorate with whipped cream and dollops of jelly.
Variation:Can also be made with leftover applesauce or stewed gooseberries.
