Ham and cheese: Works as a sandwich, works as an omelet. Your ingredients matter here: Great ham and aged cheddar will turn this into a classic. Your basic deli ham and block cheese will still be good, but nothing to have a parade about.

Ingredients

- 2 tablespoons butter
- 4 eggs, beaten
- Salt and black pepper
- 2 ounces ham, thinly sliced
- 2 tablespoons grated aged Cheddar cheese
Preparation method
Prep: 5 mins | Cook: 5 mins
1. Melt 1 tablespoon butter in a small nonstick skillet over medium-high heat. Pour in half of the beaten eggs, sprinkle with salt and pepper, and cook without stirring for about 2 minutes. As edges set, lift them gently with a spatula to allow uncooked eggs to run underneath.
2. When egg is almost completely set, add half of the ham and cheese. Fold the set egg over the filling, remove from skillet, and keep warm while you repeat with remaining egg and filling. Serve.
