Cinnamon butter coffee cake recipe details
- Ingredients
- 2-1/2 cups sifted all-purpose flour
- 2 cups light brown sugar, well-packed
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1 egg, beaten
- 1 cup buttermilk (it’s okay to make buttermilk from buttermilk powder)
In large bowl, mix flour, sugar, salt, and butter until crumbly. This is easiest to do using a pastry cutter or sturdy fork. Set aside about 3/4 cup of this mixture. To the remaining mixture, add all remaining ingredients. (If you like raisins, you can add about 1/2 cup and/or add 1/2 cup finely chopped nuts.)
Spread the batter in an 8 x 8-inch baking dish sprayed with Pamnon-stick cooking spray. Sprinkle the reserved crumbly mixture over the top. Bake for 45 to 50 minutes or until toothpick inserted comes out clean. Wait for about 10 minutes before cutting. If serving this after it’s already totally cooled, then cut, place on serving platter, and warm in microwave for a couple of minutes. This cake is great warm.
