Cinnamon apple walnut pancakes recipe details
- Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 Tablespoons sugar
- 2 cups buttermilk
- 3 eggs, separated
- 1/4 cup melted butter
- 1 teaspoon vanilla
- 2 Granny Smith Apples — peeled, cored, and chopped
- 1/3 cup chopped walnuts
Sift all the dry ingredients in a mixing bowl. Stir in the buttermilk, vanilla, and beaten egg yolks. Add the butter and beat until smooth. Stir in the apples and walnuts. Beat the egg whites until they are stiff but not dry, and gently fold into batter. Drop the batter by spoonfuls onto a lightly greased hot griddle and bake until golden brown. Turn and brown other side. Serve immediately with warmed maple syrup.
