Ingredients
1 | chicken |
10 | shallots, chopped |
2 clove(s) | garlic, minced |
100 ml | Calvados |
400 ml | cider, dry |
150 ml | double cream |
½ bunch(es) | chives |
salt and pepper | |
oil |
Instructions
Joint the chicken into 8 pieces. In a heavy cast iron casserole, heat some oil and fry the chicken joints together with shallots and garlic until all is nicely browned. Pour over the Calvados and ignite. When the flames have died, pour in the cider, cover and cook over low heat for an hour.
When the chicken is cooked, take out of the casserole and keep warm on a shallow serving plate. Boil down the sauce to half. Take from heat and stir in the cream. Season to taste with salt and pepper. Coat the chicken joints with the sauce and serve sprinkled with chives.
