Ingredients

113 g butter
115 g castor sugar
2 medium eggs
230 g flour, self-raising
1 tsp bicarbonate of soda
100 ml cider

Instructions

Preheat oven to 180°C and grease a cake tin.

Beat together the butter and sugar until fluffy.

Sieve half of the flour and the bicarbonate of soda into a bowl. Add the beaten eggs and mix well. Then pour in the cider and beat well. Stir in the rest of the sieved flour and mix well again.

Bake for around 40 – 45 minutes until firm to touch. Cool on rack.
