Christmas Truffles recipe
|125 g||dark chocolate|
|125 g||butter, unsalted|
|275 g||icing sugar, sifted|
|30 ml||brandy, rum, whisky or sweet sherry (30-45ml)|
|browned almond nibs|
Break the chocolate into small pieces and melt in the microwave or a double boiler. The time will depend on your microwave, try starting with 1 ½ minutes (1000Watt microwave) on medium power, stirring halfway through the cooking time.
Meanwhile cream the butter and sugar until light and fluffy.
When the chocolate is melted, but not too hot, add it to the butter mixture and mix well.
Add the alcohol, a little at a time, beating well. Chill the mixture.
Dust your hands with icing sugar and roll a spoonful of the mixture into a ball. Then roll the balls in different coatings of almonds, cocoa or chocolate vermicelli.
Place in pretty paper cups.
