Christmas cupcakes with cinnamon icing recipe details
Ingredients
115 g | flour |
1 tbsp | baking powder |
120 g | butter |
120 g | sugar |
2 medium | eggs, beaten |
150 ml | orange juice |
For the Icing: | |
1 tsp | cinnamon |
juice of 1/2 lemon | |
200 g | icing sugar |
Instructions
Cream the sugar and butter in a large bowl.Beat the eggs and add the orange juice. Keep beating until smooth. Sift in the flour and baking powder.
Preheat oven to 180°C.
Spoon into cupcake cases and bake for about 15-20 minutes, or until light gold and risen.
Icing:
Squeeze the lemon juice into a bowl and add the cinnamon. Sift in most of the icing sugar, stopping when you reach a spreadable consistency. Spoon over the cool cupcakes and leave to set.
