Christmas crumble cake recipe details
Ingredients
| 200 g | butter, soft |
| 200 g | sugar |
| 1 medium | egg |
| 1 | lemon, zested |
| 500 g | flour |
| 1 tsp | baking powder |
| 450 g | cherry jam |
| 50 g | almonds, ground |
| ½ cup(s) | icing sugar |
Instructions
Mix together the butter and the sugar until creamy. Beat in the egg and stir in the zest. Sift in the flour and the baking powder. Knead until crumbled.Fill half of the dough into a buttered cake form. Press lightly.
Preheat the oven to 180°C.
Brush the cake bottom with the jam. Mix together the remaining dough and the almonds. Crumble the remaining dough over the jam. Bake for 20-30 minutes until golden. Allow to cool.
Serve sprinkled with the icing sugar.
