Ingredients

400 ml condensed milk
115 g butter
2 tbsp golden syrup
4 medium eggs
1 tsp vanilla extract
1 tsp lemon extract
1 tsp almond extract
200 g flour
1 pinch(es) salt
½ tsp mixed spice
½ tsp nutmeg
5 tsp curry powder
800 g mixed dried fruit
1 tsp baking soda
60 ml milk
450 g pineapple chunks, drained, crushed
40 ml sherry

Instructions

Combine condensed milk, butter and syrup in a pot over simmering water. Stir to melt and combine.

Add eggs beating in one at a time, vanilla, lemon, and almond extract.

Combine 150g flour with the mixed dried fruit, mix well and set aside.

Sift the remaining flour and combine with the salt and spices. Mix into the butter and egg mixture.

Add the mixed fruit.

Dissolve baking soda in the milk and also add to the mixture.

Mix in drained and crushed pineapple and mix everything well together.

Preheat oven to 150°C.

Pour batter into a spirngform pan and bake for 4 hours. Pour sherry over the cake when cooked.
