Chocolate zabaglione recipe details
Ingredients
75 g | unsweetened dark chocolate |
60 ml | double cream |
4 large | egg yolks |
50 g | caster sugar |
2 tbsp | amaretto liqueur |
Instructions
In a saucepan, add enough water to fill to a depth of 5-6cm, 2-2½ inches and bring to a simmer.Support a glass or steel bowl over the pan and add the cream and chocolate, stirring occasionally until the chocolate has melted. Remove from heat.
While the water remains simmering, place another bowl over the pan and add the yolks and sugar. Using an electric whisk or hand blender, whisk until light – 1½-2 minutes. Add the Amaretto.
Continue whisking until light and fluffy and holds soft peaks when the whisk is removed – 5-7 minutes. Remove from heat.
Fold yolks into chocolate mixture, using a plastic or rubber spatula.
Serve immediately in glasses, with amaretti or savoiardi biscuits.
