Ingredients
Serves: 8- For Filling:
- 6 ounces cream cheese
- 1 (14 oz) can sweet condensed milk
- 3 tablespoons lemon juice
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup respberries (fresh or frozen)
- 1 prepared graham cracker crust
- For Topping:
- 2 ounces semisweet chocolate
- 1/4 cup whipping cream
Preparation method
Prep: 15 mins | Cook: 30 mins | Extra time: 1 hour, chilling1. Preheat oven to 350 degrees F.
2. With mixer, beat cream cheese in mixing bowl until fluffy. Gradually beat in sweetened condensed milk until smooth. Add lemon juice, egg, and vanilla. Mix well.
3. Arrange raspberries in a layer on bottom of crust. Slowly pour cream cheese mixture over fruit.
4. Bake for 30 to 35 minutes, until set. Cool completely.
5. For topping, heat chocolate and whipping cream in double boiler. Stir until thick and smooth. Pour over pie and let chill, at least 1 hour.
6. Garnish with extra raspberries and mint sprigs if desired.
