Ingredients

For the chocolate cake:
store bought chocolate cake or your own creation
For the Frosting:
200 g cream cheese
150 g powdered sugar
75 g butter
For the topping:
150 g couverture milk chocolate
100 g almonds, chopped

Instructions

Note: you can of course make any basic cake from scratch but making cake pops involves so many little steps that are all quite time consuming; it is easier to make or even buy your favourite cake (basic chocolate, basic vanilla or marble cake for example) to save a little work and time. The fun starts with the decoration, coating, extras etc…

Cake:
Prepare the cake according to the cake mix description. Into a large bowl finely crumble the cake with your hands.

Frosting:
Mix together the cream cheese, butter and powdered sugar until creamy, about 1 minute, with an electric mixer.

Preparing the cake pops:
Gradually add the frosting to the crumbled cake and mix again, using your electric mixer. It may be that you won’t even need all the frosting. It is important that the cake mixture becomes quite gooey.

With your hands start rolling little balls and place them on a plate or wooden board. Once you have completed the first half, place them in the freezer. Start preparing the next load of cake balls and then also place them in the freezer.

Start melting the chocolate in a bowl inside a pot over medium heat. Have the sticks at the ready. Also prepare a stand, a carton or a box where to place the cake pops after coating.

Take out the first lot from the freezer and place one end of the stick into the melted chocolate and then push it into a ball. When finished with all sticks, place back into the freezer and repeat the procedure with the second lot.

Leave the cake pops inside the freezer for about 2 hours.

Topping:
Take out the cake pops from the freezer and roll the cake pop inside the bowl of chocolate to cover it entirely with chocolate. Then drizzle the nuts over the chocolate. Now stick the cake pop into a carton or similar to set. Due to the fact that the cake pop itself has been frozen, the chocolate will dry quickly and won’t drip that much.

For further cooling place the finished cake pops into the fridge until serving time so that they won’t start to melt but aren’t freezing cold either. The cake pop tastes best of course when at room temperature.
