Ingredients
75 g | unsalted butter, softened |
225 g | sugar |
2 large | eggs, separated |
2 | squares unsweetened chocolate, melted and cooled |
340 g | plain flour |
1 tsp | baking powder |
½ tsp | bicarbonate of soda |
½ tsp | salt |
180 ml | beer or lager |
Instructions
Butter a 2lb, 900g-1Kg loaf tin. Preheat oven to Gas Mark 5, 190°C, 375°F.Cream butter and sugar in a bowl until light and fluffy. Add the yolks, one at a time and beat well in between. Add the chocolate and beat until smooth.
Sift flour, baking powder, bicarb and salt three times between two bowls and add to the butter mixture a little at a time, alternating with the beer. Blend well.
Beat the egg whites in a clean bowl until stiff but not dry and fold in to batter.
Bake for about 30 minutes. Check with skewer to see that it is done, if not cook a few minutes longer.
Remove from oven and allow to cool in tin for several minutes. Invert onto a rack and allow to cool completely.
Serve plain or with a frosting of choice.
