This is a man’s applesauce, with the smoky flavor of chipotle adding much-needed heat.
Ready in: 30 mins
Ingredients
Serves: 4- 1 tablespoon olive oil
- 1 red onion, chopped
- Salt and pepper
- 1 chipotle chile in adobo sauce, finely chopped
- 1 tablespoon adobo sauce
- 3 tablespoons brown sugar
- 4 red apples, cored and chopped
- 1 cup apple cider
- 1 teaspoon lemon juice
Preparation method
Prep: 10 mins | Cook: 20 mins1. Pour olive oil into a large saucepan and set over medium-high heat. Toss red onion in hot oil and sprinkle with salt and pepper to taste. Cook for about 5 minutes to soften.
2. Turn heat down to medium. Add remaining ingredients to the saucepan and stir well. Let the sauce cook for about 20 minutes, stirring every now and then, until it thickens. Stir in salt to taste.
3. Serve hot, or chill and serve cold.
