Ingredients
Serves: 3- 2 chicken breasts, cubed
- 1/2 cup soy sauce
- 1 cup sherry
- 1 tablespoon sesame oil
- 1/2 cup unsalted cashews
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1/2 cup chopped water chestnuts
- 2 tablespoons hoisin sauce
- Hot cooked rice
Preparation method
Prep: 10 mins | Cook: 15 mins | Extra time: 2 hours, marinating1. Combine the chicken, soy sauce, and sherry in large plastic resealable bag. Seal and leave in the fridge to marinate for 2 hours.
2. In a wok or large skillet, heat the sesame oil on high heat. Fry the cashews for 30 seconds, then remove them and set aside.
3. Add the cubed chicken to the skillet and fry for about 10 minutes, until nearly cooked through. Remove.
4. Add the green pepper, onion, and water chestnut, and cook for about 2 minutes. Then add the chicken and cashews back into the dish, along with the hoisin sauce, and cook to heat through.
5. Serve over rice.
