Makes: 2 cups- 3/4 cup plus 1 teaspoon olive oil
- 6 cloves garlic, minced
- 1/2 cup minced fresh parsley leaves
- 6 tablespoons red wine
- 2 tablespoons minced fresh oregano leaves
- 1 tablespoon chopped red onion
- 2 teaspoons dried red pepper flakes, or to taste
- 1 teaspoon black pepper
- Salt and more pepper, to taste
