Ingredients
4 large | potato(es) |
2 tbsp | olive oil |
1 tsp | chilli flakes, dried |
tsp | salt and pepper |
140 tsp | soured cream |
1 tbsp | chive(s), chopped |
½ | onion(s), red, peeled |
4 | onion(s), spring |
Instructions
Preheat oven to 220°C, 425°F, Gas 7.
Slice each potato into eight wedges. Tip them into a roasting tin, drizzle with olive oil and sprinkle with chilli flakes. Season, toss to coat, then spread out in a single layer.
Bake in the preheated oven for about forty minutes or until tender, turning them halfway through to make sure that they brown evenly.
Mix the soured cream with most of the chives and red onion or spring onions, spoon into a small bowl and sprinkle the remaining chopped chives and red onion or spring onions on top. Serve with the baked potato wedges.
