Ingredients
800 g | chicken breast fillet, cut into bite-sized pieces |
1 | red bell pepper, diced |
1 | yellow bell pepper, diced |
2 | carrots, peeled and grated |
1 large | onion, chopped |
1 clove(s) | garlic, chopped |
2 stalk(s) | celery, chopped |
500 g | canned tomatoes |
1 pack(s) | tomatoes, puréed |
1 tsp | chilli powder |
1 tsp | paprika powder |
1 tsp | cumin |
cayenne pepper | |
1 | bay leaf |
200 ml | chicken stock |
oil |
Instructions
In a pan heat some oil. Add the meat and stir-fry until lightly browned. Season with salt and pepper. Transfer the meat into a bowl and keep warm.Add the peppers, carrots, onion, celery and the garlic into the pan. Sauté until lucent. Add the spices and fry for 1 more minute. Add the tomatoes, puréed tomatoes, stock and the bay leaf and bring to a boil. Reduce the heat and simmer for 15 minutes. Return the chicken and simmer for another minute. Adjust seasoning. Remove the bay leaf and serve.
If you don’t care about low-fat and low-carb, serve the chilli con pollo with crème fraîche and fresh baguette.
