Chilled tomato tarragon recipe details
Ingredients
120 ml | olive oil |
7 tbsp | fresh tarragon, finely chopped |
8 | baguette slices |
700 g | plum tomatoes, chopped |
1 | shallot |
4 clove(s) | garlic, minced |
¼ tsp | pepper, freshly ground |
2 tbsp | tomato paste |
Instructions
Mix together 60 ml of the oil and 4 tablespoons tarragon in a bowl. Season with salt and pepper and brush over both sides of bread.Toast bread in a large pan over medium heat until crisp, about 6 minutes per side.
Meanwhile, heat the remaining oil in another large skillet over medium heat. Add tomatoes, shallot and garlic and remaining tarragon. Sauté until vegetables just begin to soften, about 6 minutes.
Stir in tomato paste and reduce heat to low. Cover and cook until vegetables are soft, stirring occasionally, about 10 minutes.
Strain soup into bowl and discard solids. Season soup with salt and pepper.
Freeze soup for about 30 minutes and then ladle into bowls. Top with croutons.
