Chilled strawberry soup recipe details
- Ingredients:
- One 10-ounce package frozen strawberries in syrup, thawed
- 2 Tablespoons cornstarch dissolved in 1/2 cup cold water
- 1 cup low-fat sour cream
- 2 cups whole milk
- 2 to 4 Tablespoons strawberry liqueur
- Whipping cream for garnish
- Violas or Johnny Jump-ups, or if unavailable, use a sliced strawberry

Boil strawberries in medium saucepan; stir in cornstarch mixture. Stir and simmer for 3 minutes. Transfer to a bowl and cool to room temperature. Whisk in sour cream, milk, and strawberry liqueur. Cover and chill.
We serve this during the summer months as our fruit course. We garnish with a dollop of whipped cream and a Johnny Jump-up or viola (we have these growing everywhere!).
