Ingredients
1 bunch(es) | parsley, roughly chopped |
12 sprig(s) | basil, leaves only |
15 g | pine nuts, toasted |
3 tbsp | olive oil |
4 tsp | crème fraîche |
salt and freshly ground black pepper | |
1 kg | potatoes, peeled |
3 | chicken breast fillets |
12 slice(s) | Parma ham |
4 tbsp | oil |
250 ml | milk |
50 g | butter |
nutmeg |
Instructions
Place the basil, parsley, pine nuts, 5 tablespoons of water and the olive oil into a blender and process until smooth. Add by and by the crème fraîche. Season to taste with salt and pepper.Cook the potatoes in salted water until done.
Cut each fillet into 8 slices. Cut the mozzarella into 12 slices. Season the chicken with salt and pepper. Place a slice of mozzarella onto one side of each chicken escalope and fold over the other side. Wrap tightly each with a slice of ham. In a large pan, heat the oil. Fry the wraps over medium heat for 10-12 minutes, turning occasionally.
Drain the potatoes. Heat the butter and the milk, add to the potatoes and mash. Season to taste with salt, pepper and nutmeg. Place in a serving bowl and add the crème fraîche mixture. Marble with a fork. Serve together with the chicken wraps.
