Ingredients
Serves: 4- 1/3 cup walnuts
- 3 (5 ounce) boneless, skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup plain yogurt
- 3 tablespoons horseradish
- 2 tablespoons mayonnaise
- 2 tablespoons fresh lemon juice
- 2 cups seedless red grapes, sliced in half
- 1 1/2 cups thinly sliced celery
- 2 red apples, cubed
- 4 cups shredded romaine lettuce
Preparation method
Prep: 10 mins | Cook: 18 mins1. Preheat oven to 350 degrees F.
2. Scatter walnuts on a baking sheet. Bake for about 8 minutes, or until toasted. Transfer to a cutting board and chop.
3. Preheat broiler to High. Place chicken on a broiler pan, sprinkle with salt and pepper, and broil for about 10 minutes, 6 inches from the heat source, flipping once midway through cooking time. Chicken should be no longer pink inside. Slice into bite-sized pieces.
4. Combine yogurt, horseradish, mayonnaise, lemon juice, and salt and pepper to taste in a bowl. Toss with walnuts, chicken grapes, celery, apples, and romaine. Serve.
