Chicken thighs with sweet onion balsamic relish recipe details
Ingredients1. Skinless chicken thighs (4 about 6 ounces)
2. Vidalia onion or some other sweet onion, cut into large dice (1lb)
3. olive oil (2tsp)
4. chopped parsley (1tbsp optional)
5. balsamic vinegar, divided salt (5tsp)
6. dried thyme (1/2tsp)
7. dried oregano (1/4tsp)
8. ground black pepper, divided (1/2tsp)
Method of preparation
1. Take a large nonstick pan, place it over medium heat. Heat the oil in it and then saute onion and ¼ teaspoon of pepper in it for about 5 minutes until the onions get soft and changes to golden in color.
2. Then add chicken, ¼ teaspoon of pepper, thyme and oregano in the pan. Sprinkle the 4 teaspoons of balsamic vinegar over it.
3. Cover the pan, turn down the heat and keep it to simmer for about 25 minutes until the chicken gets cooked.
4. Now increase the heat, uncover the pan and keep it to cook for about 2 minutes until the liquid gets absorbed. Mix 1 teaspoon of vinegar and sprinkle parsley over it and then serve it.
