Chicken stock details
INGREDIENTS:1 chicken carcass
2 sticks celery, cut into sections
2 small carrots, split in half length ways
2 small onions, sliced
3 bay leaves
1 tsp black peppercorns
1 small bunch of celery leaves
2-2.5 liters of water or more, enough to cover all the ingredients
Pinch of salt
Method:
- Pour water into a pot.
- Place all ingredients in the pot and bring to a boil.
- Reduce fire and simmer over a low fire for at least 2 hours.
- Strain chicken stock to discard the chicken carcass and vegetables.
