Chicken stir fry with rice noodles recipe details
Colorful stir fry that’s very quick and easy to make. I combine all fresh dry ingredients with store bought Chinese sauces to make a great dish to serve over cracked rice noodles.

Ingredients
Serves: 2- 1/2 lb Boneless Skinless Chicken Breast
- 2 tsp vegetable oil
- 1/3 cup chopped red pepper
- 1/3 cup chopped green pepper
- 1/3 cup petite (or baby) carrots
- 1/4 cup corn
- 2 tsp hoisin sauce
- 2 tsp chili paste
- 2 packets somen (rice-noodle sticks)
Preparation method
Prep: 20 mins | Cook: 15 mins1. Finely slice the chicken breasts into small strips to fry. In a medium pot, bring water to boil.
2. In a large wok, fry the chicken strips in the vegetable oil on med-high, until cooked through. (~5-7 minutes)
3. Lower the heat to medium. Add the chopped peppers (red & green), carrots, and corn. Cook for 2-3 minutes.
4. At this time add the hoisin sauce and chili paste to the stir fry.
5. Now cut the somen noodles into 2-3 inch pieces and add to the boiling water. Lower the water to low and cook for 2-3 minutes until tender. Drain the noodles in a colander.
6. Serve the noodles on a plate or bowl and spoon the finished stir-fry on the top.
