Chicken paillard recipe details
Ingredients
4 | boneless and skinless chicken breasts |
2 tsp | thyme |
2 clove(s) | garlic |
100 g | shallots, chopped |
75 g | sugar, caster |
125 ml | vinegar, white wine |
125 g | tomatoes, finely diced |
500 g | peppers, red, |
100 ml | oil, olive |
salt and pepper | |
1 bunch(es) | basil, chopped |
Instructions
Dice peppers and roast them. Slice each chicken breast across the middle lengthways and fold out so that the breast has a butterfly shape.Place each breast between two sheets of cling film and bat out gently but firmly the size of the inner rim of a serving plate, then place in a fridge for 1-2 hours. Then combine the thyme, chopped garlic and 25 ml olive oil, and set aside.
Simmer shallots, sugar and vinegar together until reduced by a third. Leave to cool slightly and then mix in the peppers, tomatoes and 75 ml olive oil. Then cool and add the chopped basil.
Peel off the cling film from the chicken breasts. Brush with the thyme and garlic mixture, season with salt and pepper, and place on the grill. Cook for 2 minutes, then turn over and repeat. Place the chicken breasts on a plate with a dollop of the relish on top and garnish with salad leaves
