Chicken livers in sherry recipe details
Ingredients
250 g | chicken livers |
1 medium | onion, finely chopped |
2 small | garlic cloves, finely chopped |
1 tbsp | olive oil |
1 tsp | fresh thyme leaves |
2 tbsp | sweet sherry |
2 tbsp | sour or double cream |
salt and freshly ground black pepper, to taste | |
fresh thyme, to garnish |
Instructions
Trim any green spots and sinews from the chicken livers and cut into smaller pieces if wished.Heat the oil in a frying pan and stir-fry the onion, garlic, thyme and chicken livers for 3 minutes.
Stir in the sherry and cook gently for a couple of minutes.
Then add the sour or double cream and cook 1 – 2 minutes more over a low heat. Season to taste with salt and pepper and serve at once, garnished with the fresh thyme.
This simple tapa dish tastes beautiful with fresh crusty bread, or with bread fried in a little olive oil.
