Ingredients

2	chicken breasts or legs
150 g	mushrooms, chopped
20 g	fresh or dried parsley, chopped
2 clove(s)	garlic, minced
300 ml	red wine
50 ml	vegetable broth
100 ml	olive oil
150 g	rice

Instructions

Heat olive oil over low heat, add mushrooms and parsley and sauté until softened. Add garlic and continue to cook whilst stirring to combine. Add red wine and continue stirring. Cover, and cook for 2 minutes.

Add chicken, cover and cook until tender and cooked through, about 30-40 minutes.

Meanwhile cook rice until tender.

Remove chicken from pan and add cooked rice to combine with sauce.

To serve, spoon rice onto a plate, make a well and place chicken inside.
