Chicken gong bao recipe details
Ingredients
400 g | chicken breast fillet, cut into strips |
1 tsp | cornstarch |
50 g | peanuts, chopped |
1 | onion, chopped |
2 clove(s) | garlic, chopped |
1 bunch(es) | spring onions, trimmed and finely sliced |
2 | red hot chili peppers, finely chopped |
25 g | sugar |
50 ml | Chinese rice wine or dry sherry |
1 tbsp | rice vinegar |
10 | Szechuan peppercorns, pestled in a mortar |
1 tsp | freshly grated ginger |
20 ml | sweet soy sauce |

sesame oil |
Instructions
First, coat the bottom of the wok with peanut oil and heat until very hot. Dust the meat with cornstarch. Place into the pan and stir-fry until golden all around. Take out of the pan and then stir-fry the peanuts lightly. Add more oil if necessary.Remove the peanuts and fry the onions until golden. Then add the garlic, the spring onions and chili peppers and stir-fry for a minute. Deglaze with the wine and vinegar and switch the heat to low. Simmer for a minute. Return the peanuts and the meat and simmer until hot again. Add ginger and season to taste with Szechuan pepper, soy sauce and sesame oil.
Serve with rice.
