Ingredients

400 g chicken breast fillet, cut into strips
1 tsp cornstarch
50 g peanuts, chopped
1  onion, chopped
2 clove(s) garlic, chopped
1 bunch(es) spring onions, trimmed and finely sliced
2  red hot chili peppers, finely chopped
25 g sugar
50 ml Chinese rice wine or dry sherry
1 tbsp rice vinegar
10  Szechuan peppercorns, pestled in a mortar
1 tsp freshly grated ginger
20 ml sweet soy sauce
peanut oil
sesame oil

Instructions

First, coat the bottom of the wok with peanut oil and heat until very hot. Dust the meat with cornstarch. Place into the pan and stir-fry until golden all around. Take out of the pan and then stir-fry the peanuts lightly. Add more oil if necessary.

Remove the peanuts and fry the onions until golden. Then add the garlic, the spring onions and chili peppers and stir-fry for a minute. Deglaze with the wine and vinegar and switch the heat to low. Simmer for a minute. Return the peanuts and the meat and simmer until hot again. Add ginger and season to taste with Szechuan pepper, soy sauce and sesame oil.

Serve with rice.
