Ingredients
500 g | spaghetti |
700 g | ripe tomatoes, peeled, pips removed, sliced |
1 tbsp | capers |
3 | anchovies, diced |
1 sprig(s) | oregano, chopped |
1 sprig(s) | marjoram, chopped |
1 sprig(s) | thyme, chopped |
1 bunch(es) | basil, chopped |
3 sprig(s) | parsley, chopped |
1 clove(s) | garlic, minced |
1 tbsp | white balsamic vinegar |
100 ml | olive oil |
salt and pepper |
Instructions
In a bowl, combine the tomatoes, capers, herbs, anchovies, vinegar and oil. Season to taste with salt and pepper. Allow to marinate for an hour.Cook the pasta in salted water until al dente. Drain and combine with the tomato salsa. Season with freshly ground black pepper and serve immediately.
