Ingredients
4 | chicken supremes, skinless |
2 bunch(es) | spring onions or welsh onions |
8 | mushrooms, sliced |
3 clove(s) | garlic, finely sliced |
2 glass(es) | dry white wine |
1 | chicken stock cube in a little water |
4 | single cream or crème fraîche |
1 | knob of butter |
2 tbsp | olive oil |
½ | lemon, zested and juiced |
salt and black pepper, to taste |
Instructions
Chop the onions, mushrooms and garlic. Season the chicken and sprinkle with lemon juice and leave to marinade for a few minutes. Melt the butter with the olive oil in a large frying pan. Fry the mixture of onions, mushrooms and garlic until it is reduced in bulk. Add the chicken supremes to the pan and fry, turning the chicken frequently, until it is just about cooked through, and the vegetable mixture is browning in the pan. Remove the chicken and keep warm in the oven.Deglaze the pan with the wine. Add the stock and stir until dissolved, and add a wine glass of water if necessary. Reduce the stock until it is well flavoured. Remove from the boil and add the cream or crème fraîche, stirring vigorously.
Serve the chicken on a bed of pasta spirals, noodles or rice, pouring over the sauce, accompanied by mangetout peas.
