Chicken drumsticks with salsa recipe details
Ingredients
8 | chicken drumsticks |
400 g | tomatoes, finely diced |
2 | bell peppers, red and yellow, finely chopped |
salt and freshly ground black pepper | |
3 | spring onions, finely chopped |
1 tbsp | sweet and sour sauce |
1 kg | potatoes, peeled and quartered |
4 sprig(s) | thyme, chopped |
2 tbsp | white balsamic vinegar |
5 tbsp | olive oil |
1 tbsp | ketchup |

1 tsp | honey |
½ tsp | paprika powder |
3 clove(s) | garlic, minced |
Instructions
Preheat the oven to 175░C.Mix the tomatoes with the bell peppers, vinegar, 2 tablespoons of the oil, spring onions and ketchup. Season to taste with salt, pepper and chili sauce and allow to soak until required.
In a small bowl, mix together the sweet and sour sauce, honey and paprika powder.
Divide the drumsticks and potatoes with the garlic on the baking tray and sprinkle with the remaining oil. Brush the drumsticks with the honey marinade. Bake for 30-45 minutes or until the potatoes are done and the drumsticks are golden and crispy. Season with salt and pepper, add the thyme and bake for 5 more minutes.
Serve with the salsa.
