Ingredients
Serves: 4
- 1/2 cup refried beans
- 1/2 cup salsa
- 4 (6-inch) pita
- 1 cup cubed cooked chicken breast (see footnote)
- 2 tablespoons chopped green chiles
- 2 tablespoons sliced ripe olives
- 3/4 cup shredded Colby Jack cheese
- 1/2 cup sour cream, optional
- 1 green onion, chopped, optional
Preparation method
Prep: 10 mins | Cook: 10 mins
1. Preheat oven to 350 degrees F.
2. In a bowl, combine beans and salsa. Coat pitas with the mixture, then place on baking sheet. Top with chicken, chiles, and olives.
3. Bake for about 10 minutes to melt the cheese. Top with sour cream and green onion, if desired.To quickly cook chicken:
For 1 cup cooked cubed chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1/2 pound boneless chicken breasts or thighs, cubed, for 5 minutes or until chicken is done. Drain.
