Appalachian trail bran muffins recipe details
- Ingredients:
- 5 cups All Brancereal
- 2 cups boiling water
- 1 cup sugar
- 1 cup oil
- 2 cups molasses
- 1 cup buttermilk
- 4 eggs, beaten
- 5 cups self-rising flour
- 2-1/2 teaspoons of baking soda
- 1 teaspoon salt
Preheat oven to 400 degrees. In a small bowl, combine 2 cups of cereal and 2 cups of boiling water; set aside to cool. In a large bowl, combine sugar, oil, molasses, buttermilk, eggs, and 3 cups of cereal; mix well after each ingredient is added. In a medium bowl, combine flour, baking soda, and salt; mix well. Add flour mix to buttermilk/bran cereal mix; mix well. Raisins, nuts, or diced cooked apples may be added just before baking. Fill greased muffin tins about 3/4 full and bake for 15 to 20 minutes.
Note:These hearty muffins keep hiker’s appetites at bay and can be premixed and stored in the refrigerator for up to two months. Just spoon into muffin tins and bake!
