Chicken breast with coconut sauce recipe details
Ingredients
8 | chicken breasts, left whole or diced |
2 large | onions, chopped |
1 clove(s) | garlic, minced |
2 tbsp | olive oil |
400 ml | coconut milk |
Instructions
Heat the oil in a medium saucepan and sauté onions and garlic. Make sure that garlic does not burn, so you may want to add a little water. Add chicken breasts and brown lightly.Pour coconut milk into the pan and allow to simmer an additional 20 minutes, or until chicken is cooked through. Place on serving dish and ladle over with sauce.
Serve with rice or couscous.
