Chicken and vegetables frittata recipe details
Ingredients
6 medium | eggs |
1 medium | potato, peeled, cooked, diced |
1 small | onion |
2 | chicken legs, cooked, shredded |
60 ml | milk |
2 tbsp | butter |
1 | red bell pepper, chopped |
1 | green bell pepper, chopped |
1 tbsp | olive oil |
salt and pepper, to taste |
Instructions
Preheat oven to 180°C.In a bowl combine milk, eggs and salt. Mix well.
Sauté the diced potatoes with olive oil until tender. Season with salt.
Add onion and peppers to the potatoes and sauté until tender.
Combine chicken with vegetables in a bowl.
Melt butter in an oven proof dish and pour egg and milk mixture into the dish. Add the chicken and vegetables over the egg mixture and bake ubtil set, about 20 minutes.
